Remember a while back when I told you guys I was supposed to have a video interview with Tyler Florence, well we had some technical difficulties on the day I was supposed to interview him and didn’t actually get the opportunity to speak with him face to face. But the awesome PR folks behind the scenes were able to still get my questions answered. Here is the interview with Tyler Florence that almost didn’t happen:
@NannyPickle would love to know: What is your best recipe and technique for scrambled eggs?
I like to use about a teaspoon or so of milk for every egg I am scrambling. (obviously, if you’re scrambling 6 eggs for your family, this means about 6 teaspoons of milk.) Then, I beat the eggs in a large mixing bowl with a whisk until the color is even throughout. (it’s critical that there’s a lot of air in the mixd so the eggs turn out fluffy, but if you overdo it, you’re gonna have a mess on your hands.) About 2 minutes should do it. Then, I hit the mixture with some sea salt and ground pepper (to taste) and throw it into a pre-heated, greased cast iron skillet, which I believe makes all the difference. Once they start to set, I use a spatula to pull them away from the edge of the pan. When the eggs are about 90% set, I turn off the heat and let them cook the rest of the way in the cast iron.

I’m trying to figure out what to make for lunch other than the typical sandwich. What are some good alternative lunches that are quick, easy and kid-friendly?
My Kids love Cheese and Cracker combos. Use a cookie cutter to make interesting shapes out of different cheeses and lunch meats and pair those with crackers. Throw in some fruit and a portable bottle of milk- and your kid has a cool-looking, highly nutritious meal that feels more like a picnic than a regular old brown bag lunch.
@ideativePM wants to know: What is your favorite “go-to” dish is that doesn’t take much time but impresses most people?
Actually, the recipes I provided on WhyMilk.com all fit that bill- particularly the roast chicken. All you have to do is season the bird and pop it in the oven for an hour. After that, you have something on the table that has incredible presentation and tastes absolutely incredible.
Where do you get inspiration for new dishes? (via @ideativePM )
Well, I’ve got about 20,000 recipes in my databank – the original concepts I kind of just come up with. I’m just working on constantly evolving. I also like to cook what’s in front of me; I stick to the seasons. I love pumpkins when it’s pumpkin season, I love corn when it’s corn season. I just try to dream it up and keep it fresh for you guys.
You recently dawned a Milk Mustache, Can you tell us more about the “Milk the Moment” campaign?
I’m the new spokesperson for milk. So after 15 years on television, I’ve done some pretty cool things in my career. I’ve cooked at the White House and this is something that’s such an honor to be asked to do. Everyone doesn’t get a milk mustache. I have three kids and when you open up my fridge, there’s a whole wall of milk.

What are some tips for families to “make dinner matter”?
If you go to whymilk.com, it’s one of my favorite Web sites that milk and I have been working on together, there are lots of great recipes. That’s where it starts. Make sure you’ve got a cook in the kitchen and have what I call the quiet hour. I’ve got to turn off my cell phone, we turn off the television and we make dinnertime the most important thing that we do all day. We get a chance to reconnect with each other on a daily basis.
Why is Milk a good choice and how many glasses of milk should we be drinking in a day?
It really builds a strong family. It has so many great nutritional components to it. From the rich Vitamin D, all the calcium for strong growing bones, it’s got protein for lean muscle mass. It’s just really one of those great super foods. It’s such a nutritional agent that helps me get good calories to my kids and I love it! I actually can’t cook without it.
