Spring into Brunch with Velveeta

The snow has finally begun to melt and the flowers are starting to bloom. That must mean only one thing…spring is finally upon us!
This week my fellow Velveeta Kitchenistas and I are sharing some tasty Velveeta recipes centered around Spring and gathering together with friends for brunch. The recipe I chose to make was the New-Look Scalloped Potatoes and Ham (recipe provided by Velveeta). New-Look Scalloped Potatoes and Ham

recipe by Velveeta

Prep: 30 mins
Total: 1 hour
Makes 16 servings

  • 4 1/2 lb. red potatoes, cut into 1/4 inch slices
  • 1 (16 oz.) container Breakstone’s or Knudsen Fat Free Sour Cream
  • 3/4 lb. (12 oz.) Velveeta, cut into 1/2 inch cubes
  • 1/2 lb. Oscar Mayer Smoked Ham, chopped
  • 4 green onions, sliced
  • 1/4 cup Kraft Grated Parmesan Cheese

Directions:

Preheat oven to 350°F

Cook potatoes in boiling water in a large covered saucepan 10 to 12 mins or just until potatoes are tender; drain.
Remove 3/4 of the potatoes; place in a large bowl.
Add sour cream; mash until smooth.
Stir in Velveeta, ham, and onions.
Gently stir in remaining potato slices.

Spoon into 13×9-inch baking dish sprayed with cooking spray; sprinkle with Parmesan cheese.

Bake 30 mins or until heated through.

Now its time to put on that sundress, slathering on the sunscreen, and head outside to “Spring into Brunch”. What better way to enjoy Spring than with family and friends.

    I love this recipe! I’ve made scalloped potatoes a lot of different ways but never with mashed potatoes. I may just have to give this one a try.
