Whipped Up Wednesday: Cool, Refeshing DIY Iced Coffees

So there is no question about it that I’m a huge coffee addict. But I’m different from most because I love to have my coffee cold and whipped in a blender. Hot coffee gives me a headache but the cold versions don’t, imagine that.

As the budget gets tighter and tighter, I find myself not being able to go out to my local coffee place and grab a quick cup of my favorite so I’ve been starting to improvise. I’ve been trying to recreate my favorite coffee drinks at home for some years now. Each time I get a drink at my favorite local coffeeshop, I always asked what was in the drink. Without fail they all told me that the drink that I enjoyed so much was icecream based. Hmmmm the wheels in my head turned until I came up with the recipe below.

Of course this recipe can never replace a trip to the local coffeeshop but it comes pretty close to it when you are in the need of a fix without blowing your budget.

Ingredients:
2 cups vanilla ice cream (or you can use frozen vanilla yogurt if you prefer)
1/2 cup half & half ( or you can use regular milk)
Iced Coffee1 tbsp granulated instant coffee crystals
1 cup ice

Directions:

In a blender combine all ingredients until smooth. Serve in a fancy glass for a special treat at home.
If you prefer not to use ice… the drink will be a little strong, that is how I like it but for some it may be too strong so you can just add a little more half & half (or milk) to taste.

Some great mix-ins for responsibly drinking adults would be Kahlua or any coffee flavored liqueur as well as peppermint schnapps.

Want to make a Light version?
Substitute skim milk for regular milk, also you can use light ice cream.

    I have a version which is also delicious. And easy to customize.

    1 cup milk
    1 pack of single serving instant coffee
    2 tbsp powdered milk
    1/2 pack of any flavor of the small box of instant pudding (my fav is white chocolate!)
    1/2-1 cup of ice

    blend well, and ENJOY!
